Pan-baked Turmeric & Thyme Granola


Pan-baked granola with thyme, turmeric and cinnamon

Eternally grateful for my quarantine at the beach in Colombia. We have some wild desire to live here in nature. This time together let us experience, that it is actually realistic. The house is just perfect. We have a beautiful outside kitchen and it has been so inspiring to create new recipes. You will get naturally creative without access to a fully equipped kitchen and products.


For example, we don’t have an oven. We were dreaming of granola and then came up with the idea to make it in a pan instead of the oven. We have a lot of favorite varieties, so here is the first one. Our pan baked granola with Thyme, Turmeric and Cinnamon. A beautiful combination of herbs and spices that all have positive effects on several areas in the body. Cinnamon with warming and stimulating qualities, has the ability to give direction to other remedies, when it is used together. For example, Cinnamon will support Thyme in healing bronchial congestion or infections. Turmeric is a great pain killer and anti inflammatory. It has a wide spectrum of qualities, but just like Thyme does good work on the area of the mouth and upper respiratory system. Thyme and cinnamon will calm and strengthen the nervous system. They all meet in the digestive system, where they strengthen and stimulate digestion.


The most important part is to store the granola in an airtight glass container after cooling it down completely. This will make you granola last longer.

  • 4 cups of whole grain oats

  • 1 cup of pumpkin seeds

  • 1 cup of sunflower seeds

  • 1 cup of maple syrup or 1,5 cup of coconut sugar

  • 1 tbs of thyme

  • 1 tbs cinnamon

  • 1 tbs turmeric

  • 1/3 tsp sea salt

  • 1/2 cup of coconut oil

Make a small bowl with maple syrup and mix it with the thyme, cinnamon and tumeric. For a completely plant-based version, choose one of the ingredients above. I made this recipe with honey when I had no access to any other sweetener. The result will be delicious with both. First put the coconut oil and wait till it is hot. Then put the oats. The oats need a little bit more time than the other ingredients. Unless you want to make this recipe even easier, then you put it all together at the same time. If the oats are pre-baked, you can add the seeds, salt and the spiced sweetener. Stir well and don’t let it get burned. It is easier done than said. Your own pan-baked granola.
